The warmth of the nearby saltpans makes it possible for us to grow early summer vegetables. We sow and nurse the plants of tomato, eggplant, paprika, zucchini, and other vegetables in the greenhouse. In May we manually replant them in the open air and provide for their irrigation. The particular taste of our vegetables originates in the local features: the salinity from the nearby saltpans and the daily windiness due to the sea-breeze which protects the plants against diseases.
